Paskha — пасха in Russian, meaning “Easter” — is an old traditional Russian Easter dessert. There are many variations to this basic paskha recipe, some of them adding various extra flavourings in the mixture, like chopped almonds or nuts, raisins, fresh, canned or candied fruit, cocoa, chocolate, etc.

Ingredients:

• 1 kg greek anari cheese (or something similar like russian tvorog)
• 250 g butter, at room temperature
• 6 tbsp sugar
• 20 g vanilla sugar
• zest of 1 lemon
• zest of 1 orange
• 150 g dried apricots
• 150 g candied pineapples
• 100 g walnuts
• almonds and raisins to decorate

What to do:

Beat butter, sugar and vanilla sugar until creamy. Add anari, lemon and orange zests and mix thoroughly. Add chopped apricots, pineapples and walnuts. Line container of choice with plastic wrap and fill with cheese mixture. Refrigerate overnight before you unmold the Paskha. Paskha should be firm to touch in order to hold the shape well. Turn mold upside down onto decorative plate and gently pull the plastic wrap off. Decorate with candied fruits, nuts, raisins or any other edible item you choose. Traditional decorations include Christian symbols such as crosses, etc. I wrote X.В. which are the initials for a an easter greeting, meaning “Christ is Risen!”. This dessert is only served during the Easter season in Russia.

Once upon a time in a kingdom far, far away, ruled by a kind king and beautiful queen, a girl was born on the 21st of November. Time passed by, and little Mila became a beautiful princess. Gingerbread hearts and stars 

Ingredients:

puff pastry
anari (or cottage cheese)
spinach
baby rucola (optional)
eggs
cream/milk

What to do: 

First, prepare the spinach. Boil the water and pour over the spinach. Leave for 1-2 minutes. Drain the spinach and squeeze out all the extra water. Cut if the leaves were too large.

Combine the eggs, cream/milk, salt, and pepper with a ratio like for an omelette. Layer spinach and anari cheese in the bottom of the pie crust, then pour the egg mixture over it and top with baby rucola. Bake until the egg mixture is set. Cut into wedges and serve with salad.

Other super delicious combinations:

• feta cheese, fresh coriander, dill, garlic, spring onion or any other green grass you can think of
• asparagus and some more asparagus
• green peas, zucchini and feta cheese
• whatever cheese you can find in the fridge. The more the merrier
• or just be creative and make up your own!
