• 1 small squash
  • 1 green apple
  • 1/2 onion
  • 2 cloves of garlic
  • fresh thyme
  • olive oil
  • lemon juice
  • salt and pepper to taste

What to do:

Preheat the oven to 200°C. Cut ends off butternut squash, peel, and slice lengthwise. Remove seeds and chop into 2-3 cm cubes. Arrange the squash cubes, apple cubes and sliced onion in a roasting pan. Sprinkle with olive oil and lemon juice. Add crushed garlic and fresh thyme. Toss until coated. Roast for 10 minutes, toss once, and cook for an additional 10 minutes or until the squash is cooked.

This is a great recipe for a side dish!
